From Scratch: Rogan Josh Curry Paste

I tend to make a lot of things from scratch instead of buying them. Usually things made from scratch taste better and they are better for you because they are made with real ingredients instead of processed ingredients. The downside is that making things from scratch can take a long time - and people who are busy or have families don't have time to add that extra step to their meal prep. Good news! Curry paste is not one of those things that takes significantly longer to make! This added approximately 10-15 minutes to my prep time and in my opinion it was totally worth it.
 

 
I put off trying to make my own curry paste for a long time because I was intimidated by toasting the spices and I don't have a spice grinder or mortar and pestle. Then I came across Jamie Oliver's recipe which says you can grind the toasted spices in your food processor! I was all over that. A spice grinder or mortar and pestle are ideal - they will give the finest grind for your spices, but in my opinion my food processor worked just fine! Let it run for a while until most of the big pieces are blended and you're good to go!


Rogan Josh Paste
Recipe minimally adapted from Jamie's Food Revolution

Ingredients:
  • 2 cloves of garlic, peeled
  • thumb-sized piece of fresh ginger, peeled
  • 3 oz roasted bell peppers
  • 1 tbsp paprika
  • 1 tsp smoked paprika
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1/2 tsp sea salt
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 fresh jalapeno
  • 1 small bunch cilantro
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 1 tsp black peppercorns
Method:
  1. Put frying pan on medium high heat and add the cumin seeds, coriander seeds and black peppercorns to a dry pan. Lightly toast them for a few minutes until golden brown and smelling delicious. Remove the pan from the heat.
  2. Add toasted spices to a pestle and mortar and grind until fine (or put in food processor and whiz  to a powder.
  3. Add ground toasted spices to food processor, add remaining ingredients and whiz until you have a smooth paste. Use in curry recipe as you would use a store bought paste.

While it sounds like a long list of ingredients - I had just about everything in my pantry already! I just needed to buy the fresh ingredients like the jalapeno and the cilantro. All in all, its a pretty cost effective way to make curry paste. I highly recommend this recipe!


I used this curry paste in Jamie Oliver's Lamb Rogan Josh recipe (I used beef instead of lamb) and my huby thought it was the best Rogan Josh I've ever made. It was definitely as authentic tasting as takeout from our favorite Indian restaurant.

Sage, Butternut Squash and Goat Cheese Lasagna


 Hey Friends! Its been a while. This weekend I felt particularly inspired to whip up a new recipe and it was such an amazing recipe, I just couldn't wait to share it with you. I'll pre-warn you - its a lot of work - see the full sink of dishes in the last picture! Since all three of the sauces are made from scratch, its a bit of work. But the results are soooo delicious - well worth the extra work! Save it for a weekend and do it up!


Sage, Butternut Squash & Goat Cheese Lasagna
Recipe adapted from Meals in Heels by Jennifer Joyce

Ingredients:
  • 2 kg butternut squash, seeds removed, cut into chunks
  • 1/4 cup olive oil
  • 2 heads garlic, top 1/4 inch trimmed
  • 2 small onions, finely chopped
  • 1 tbsp. chopped sage leaves, plus 15 whole leaves
  • one package of fresh lasagna pasta sheets
  • 1 cup coarsely grated parmesano reggiano
Tomato Sauce:
  • 2 tbsp. olive oil
  • 1 package mild Italian sausage
  • 4 garlic cloves
  • 1.2 kg tinned whole roma tomatoes, pureed in a food processor
  • 1/4 tsp red pepper flakes
Goat Cheese Béchamel
  • 2 1/2 oz butter
  • 1/3 cup plain flour
  • 3 cups 1% milk
  • 100g goat cheese
Method:
  1. Preheat oven 400F. Place butternut squash on two baking trays, drizzle over a little oil and season well with salt and pepper. Drizzle garlic with a little oil and season with salt and pepper, wrap in foil and place on tray. Roast for 40 minutes or until the squash and garlic are soft. Remove the foil from garlic and set aside with squash to cool. Reduce heat to 350F.
  2. Heat remaining oil in a large saucepan over medium heat. Add the onion and chopped sage and cook for 8-10 minutes or until softened. Add squash, squeeze the roasted garlic from their skins into the pan, season with salt and pepper and roughly mash. Place in food processor and puree until very smooth. Set aside.
  3. To make the tomato sauce, brown sausage in a large saucepan over medium-high heat. Add garlic and cook for a few minutes until golden. Add pureed tomato and season with salt, pepper and red pepper flakes. Cover with lid and let simmer for 40 minutes or until thickened. Set aside.
  4. To make béchamel sauce - melt butter in saucepan over medium heat. Add flour and stir continuously wit a whisk for two minutes or until mixture becomes slightly coloured. Pour in milk and whisk quickly until there are no lumps. Continue whisking for another five minutes or until béchamel thickens. Add the cheese and stir until melted and smooth. Set aside.
  5. To assemble the lasagna - spread a little tomato sauce over base of 4 litre capacity baking dish (you'll need a fairly big one - you can see mine overflowed a bit when it baked because I didn't have a large enough pan). Cover with a layer of lasagna noodle sheets. Spread over one-third each of béchamel, then mashed pumpkin and tomato sauce. Repeat two more times, finishing with a layer of tomato sauce. Then sprinkle liberally with parmesan (you'll have some extra left over to sprinkle on slices when you serve). Scatter over the whole sage leaves and bake for 40 minutes or until golden. Remove and let stand for 10 minutes before slicing.


And that's that! It is a lovely flavour combination and was a huge hit with my family! I will definitely be making this one again! You can also make it ahead by making your sauces, assembling the lasagna and then refrigerating or freezing until you're ready to bake it. I hope you enjoy!

Mixed Greens with Wild Blueberry Dressing, Herbed Goat Cheese & Spiced Pecans


Hey Friends! I'm back in the kitchen now that my exam is over and I am so happy to be here! Hopefully I'll post more regularly and have time to start tackling some cool dishes that I've been wanting to do for a while. I'll share everything with you as I go. :)

Want to eat the best salad of your life? Make this salad!!! Seriously the best thing ever. Plus, it plates up beautifully so your dinner party guests will be wowed by how "fancy" it is. While it is a bit of work because you have to make all of the components prior to assembling your salads, if you prepare the components the day before, then you just have to plate it up when your guests come over. Its an awesome dinner party dish.


All of the below recipes are from the cookbook No more Secrets - recipes from the Cow Bay Cafe by Adrienne Johnston.

 First, make the spiced pecans.

Ingredients:
  • 3 tbsp corn syrup
  • 1 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 large pinch chipotle powder
  • 1 1/4 cups pecan halves
Method:
  1. Preheat oven to 325F. Line a baking sheet with parchment paper. Place a 30 cm piece of foil on a flat, heat-proof work surface (I used my cutting board).
  2. In a medium bowl, combine corn syrup, sugar, salt and chipotle powder. Add the nuts and mix well. Spread nuts on the prepared baking sheet in a single layer and bake for 12-15 minutes, stirring every five minutes until golden brown.
  3. Spoon them onto the prepared foil and cool slightly. Quickly separate the nuts and cool thoroughly. Store in an air-tight container.


Next, make the blueberry dressing.

Ingredients:
  • 1 cup frozen blueberries
  • 1/4 cup granulated sugar
  • 1/4 cup tarragon vinegar
  • 1 cinnamon stick
  • 1/2 tsp ground ginger
  • zest and juice of one lemon
Method:
  1. In a medium pot over medium-high heat, place the blueberries, sugar, vinegar, cinnamon stick, ginger and lemon zest and juice. Bring to a boil and simmer for five minutes. Then remove from heat and cool. Refridgerate until ready to use.
Then, make the herbed goat cheese.

Ingredients:
  • 1 small log goat cheese
  • 3 tbsp tarragon vinegar
  • fresh basil and tarragon
Method:
  1. Finely chop basil and tarragon. Combine goat cheese, tarragon vinegar and chopped herbs. Set aside in fridge.


Finally, assemble your salads when ready to serve (don't preassemble them).

Method:
  1. Toss mixed greens (approx 9 cups) lightly with olive oil, some kosher salt and fresh ground black pepper.
  2. Place a puddle of the blueberry dressing on a plate. Mound some of the greens onto the blueberry dressing.
  3. Place a few pieces of the herbed goat cheese and some of the pecans on top.
  4. Serve immediately.

Bacon & Maple Scalloped Potatoes

Alright, to get things started today - please defer to my last post for my excuses for the horrible photo quality and lack of photos in this post. I wouldn't be sharing this with you except that it tasted so good that I just can't resist.

I made these Bacon & Maple Scalloped Potatoes for our Easter dinner and they were soooo unbelievably delicious. I normally don't like Kraft recipes because of the overabundance of processed food they promote, but this recipe wasn't too bad and with a few minor swaps I found myself a dish that I will make over and over again.

Bacon & Maple Scalloped Potatoes
Recipe minimally adapted from Kraft Recipes

Ingredients:
  • 1 yellow onion, diced
  • 4 oz low fat cream cheese
  • 1 1/4 cups reduced sodium chicken broth
  • 1/2 cup milk
  • 7 slices lazy maple bacon
  • 1/4 cup pure maple syrup
  • 2 lbs baking potatoes, peeled and very thinly sliced
  • 1 cup sharp cheddar cheese, shredded
Method:
  1. Heat oven to 400F. Cook bacon until crisp in a frying pan over medium heat. Set aside on some paper towel to drain. Remove all but 2 tbsp of the bacon drippings from the pan. Return the pan to medium heat and add the onions. Sautee five minutes until very tender, stir frequently. Remove the onions from the skillet and set aside.
  2. Add the cream cheese, broth and milk to the skillet and heat until the cream cheese has melted nicely into the sauce. Stir with a whisk until sauce is smooth and creamy. Remove from heat and crumble the bacon into the sauce and add the maple syrup. Stir well.
  3. Place half the potatoes in a 9x13" baking dish in an even layer. Cover with a layer of onions and sprinkle with cheddar. Top with a layer of potatoes and repeat layers of onions and cheddar. Finally end with a last layer of potatoes. Pour bacon-maple sauce over potatoe layers. Cover tightly with foil and bake for 1 hour and 15 minutes, removing the foil after 50 minutes in the oven. Potatoes are done when top is golden brown and potatoes are tender.
We really, really enjoyed this one! My hubby doesn't normally eat leftovers, but he eagerly gobbled these potatoes up in the few days following Easter. :) I love the new twist on what is usually such a tried and true classic dish.

The Savvy Kitchen's Pizza Bites & Chocolate Peanut Butter Pretzels for SRC


After a long month off, we're back on schedule for the Secret Recipe Club! And I couldn't be more excited. This month I was assigned The Savvy Kitchen. The Savvy Kitchen is written by Amy and its a great place to find easy and delicious recipes - with a wide array of types of dishes! And since her parents are italian, she's got some great pasta recipes on there that I can't wait to try out when I have time. I loved her blog so much that I decided to make two recipes to share with you today.


First up I made these delicious pepperoni pizza puffs. They're a quick and easy appetizer and even your fussiest guest is sure to dive right into! Sorry for the quality of the pizza puff photos - we were so excited to eat them that these are the only photos I managed to snap before they were devoured.

Pepperoni Pizza Puffs
Recipe from The Savvy Kitchen

Ingredients:
  • 3/4 cup flour
  • 3/4 tsp baking powder
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 cup shredded mozza
  • 1 cup pepperoni, cut into small pieces
  • 1 small can pizza sauce for dipping
Method:
  1. Preheat oven to 375F. Spray a 24 cup mini muffin pan with non-stick spray. In a medium bowl, whisk together flour and baking powder. Whisk in the milk, eggs and seasonings. Then gently stir in the mozza and the pepperoni. Let stand for 10 minutes.
  2. Stir the batter, then divide among the prepared mini muffin cups. Fill almost to the top, then bake in preheated oven for 20-25 minutes or until puffed and golden. Serve with pizza sauce for dipping and try not to eat the whole batch in one sitting!! (good luck with that!!)


Those were such a hit in our house (we eagerly sat around the coffee table, devouring these until they were all gone!!), that I decided to try out another recipe from Amy's blog - this time something sweet.

Chocolate Peanut Butter Pretzel Bites
Recipe from The Savvy Kitchen

Ingredients:
  • 80 mini pretzels
  • 1 cup creamy peanut butter
  • 2/3 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 cup semi-sweet chocolate chips
Method:
  1. Line large baking sheet with a sheet of parchment paper.
  2. Beat peanut butter, powdered sugar and vanilla in a bowl until smooth and creamy. Roll peanut butter into 1/2 inch balls and place in the center of 40 of the mini pretzels. Top each one with another mini pretzel, pressing down slightly to sandwich the icing between the pretzels. Once all pretzel bites are formed, place in the freezer for about 15 minutes.
  3. Meanwhile, melt the chocolate in the microwave on low, stirring often so the chocolate doesn't burn. Remove the pretzels from the freezer and dip each one into the melted chocolate. Place each chocolate covered pretzel onto the parchment lined baking sheet. Allow to cool completely. Store in an airtight container for up to one week.


These were soooo addictive and delicious! We couldn't stop eating them. I'm afraid to make another batch in case I eat all of them too. But make these for a party - they're easy and quick and guests will devour them. :)

I'm so excited about finding Amy's blog! Its wonderful and I can't wait to venture back and try out some more of her recipes. They're so down to earth and low maintenance to make, which is a nice change of pace from some of the stuff I often find myself making. Broccoli & Cheddar Soup

Ahhh Saturday morning! I love sitting and enjoying a nice cup of coffee on the one day of the week I don't have to do anything. A simple thing to take pleasure in, but sometimes its just so nice to sit down and take a little breather. I still have lots to do today and tomorrow in preparation for having some of the office ladies over to my place tomorrow evening, but those things can wait while I drink my coffee. :)

Last night I was feeling a little drained after a busy week at work, so I opted for an easy and healthy dinner that hubby and I could feel good about after eating. I made a Broccoli & Cheddar soup from my new cookbook The Looneyspoons Collection by Janet & Greta Podleski. I have one of their previously published cookbooks called Eat, Shrink and Be Merry and quite honestly, I love both cookbooks. Janet & Greta do a great job lightening up everyday recipes without using obscure or expensive ingredients and this soup was no exception. The short ingredient list, easy preparation instructions and quick cooking time made this soup really appealing (not to mention the fabulous end result).


Broccoli & Cheddar Soup
Recipe adapted from The LooneySpoons Collection

Ingredients:
  • 1 tbsp olive oil
  • 1 cup chopped onions
  • 1/4 cup chopped celery
  • 3 cloves minced garlic
  • 1/2 tsp  each dried tarragon and celery salt
  • 3 cups chicken broth (I used homemade turkey stock)
  • 1 large potato, peeled and diced
  • 3 cups small broccoli florets
  • 1 cup whole milk
  • 2 tbsp all purpose flour
  • 3/4 cup packed shredded old cheddar cheese
  • 1/4 cup freshly grated parmesan cheese
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp kosher salt
  • 1 tsp hot pepper sauce (or to taste)
Method:
  1. Heat olive oil in large pot over medium heat. Add onions and celery. Cook and stir until veggies begin to soften, about five minutes. Add garlic, tarragon and celery salt. Cook 30 more seconds until fragrant. Add broth and potatoes. Bring to a boil. Reduce heat to medium low. Cover and simmer for five minutes. Add broccoli and simmer for 7 more minutes, until broccoli and potatoes are tender.
  2. Carefully transfer soup to a blender. Puree until smooth and silky. Return pureed soup to pot over low heat. Whisk together milk and flour until smooth. Add to soup. Increase heat to medium and cook until mixture is bubbly and has thickened, stirring constantly. Add both cheeses, pepper, hot pepper sauce and salt. Stir until cheeses are melted. Taste and adjust seasonings if necessary.
Thats all there is to it. I'm pretty excited to enjoy a nice bowl of this leftover soup for lunch on this cold, rainy Saturday. Have a fantastic weekend peeps!
