Sage, Butternut Squash and Goat Cheese Lasagna


 Hey Friends! Its been a while. This weekend I felt particularly inspired to whip up a new recipe and it was such an amazing recipe, I just couldn't wait to share it with you. I'll pre-warn you - its a lot of work - see the full sink of dishes in the last picture! Since all three of the sauces are made from scratch, its a bit of work. But the results are soooo delicious - well worth the extra work! Save it for a weekend and do it up!


Sage, Butternut Squash & Goat Cheese Lasagna
Recipe adapted from Meals in Heels by Jennifer Joyce

Ingredients:
  • 2 kg butternut squash, seeds removed, cut into chunks
  • 1/4 cup olive oil
  • 2 heads garlic, top 1/4 inch trimmed
  • 2 small onions, finely chopped
  • 1 tbsp. chopped sage leaves, plus 15 whole leaves
  • one package of fresh lasagna pasta sheets
  • 1 cup coarsely grated parmesano reggiano
Tomato Sauce:
  • 2 tbsp. olive oil
  • 1 package mild Italian sausage
  • 4 garlic cloves
  • 1.2 kg tinned whole roma tomatoes, pureed in a food processor
  • 1/4 tsp red pepper flakes
Goat Cheese Béchamel
  • 2 1/2 oz butter
  • 1/3 cup plain flour
  • 3 cups 1% milk
  • 100g goat cheese
Method:
  1. Preheat oven 400F. Place butternut squash on two baking trays, drizzle over a little oil and season well with salt and pepper. Drizzle garlic with a little oil and season with salt and pepper, wrap in foil and place on tray. Roast for 40 minutes or until the squash and garlic are soft. Remove the foil from garlic and set aside with squash to cool. Reduce heat to 350F.
  2. Heat remaining oil in a large saucepan over medium heat. Add the onion and chopped sage and cook for 8-10 minutes or until softened. Add squash, squeeze the roasted garlic from their skins into the pan, season with salt and pepper and roughly mash. Place in food processor and puree until very smooth. Set aside.
  3. To make the tomato sauce, brown sausage in a large saucepan over medium-high heat. Add garlic and cook for a few minutes until golden. Add pureed tomato and season with salt, pepper and red pepper flakes. Cover with lid and let simmer for 40 minutes or until thickened. Set aside.
  4. To make béchamel sauce - melt butter in saucepan over medium heat. Add flour and stir continuously wit a whisk for two minutes or until mixture becomes slightly coloured. Pour in milk and whisk quickly until there are no lumps. Continue whisking for another five minutes or until béchamel thickens. Add the cheese and stir until melted and smooth. Set aside.
  5. To assemble the lasagna - spread a little tomato sauce over base of 4 litre capacity baking dish (you'll need a fairly big one - you can see mine overflowed a bit when it baked because I didn't have a large enough pan). Cover with a layer of lasagna noodle sheets. Spread over one-third each of béchamel, then mashed pumpkin and tomato sauce. Repeat two more times, finishing with a layer of tomato sauce. Then sprinkle liberally with parmesan (you'll have some extra left over to sprinkle on slices when you serve). Scatter over the whole sage leaves and bake for 40 minutes or until golden. Remove and let stand for 10 minutes before slicing.


And that's that! It is a lovely flavour combination and was a huge hit with my family! I will definitely be making this one again! You can also make it ahead by making your sauces, assembling the lasagna and then refrigerating or freezing until you're ready to bake it. I hope you enjoy!

Mixed Greens with Wild Blueberry Dressing, Herbed Goat Cheese & Spiced Pecans


Hey Friends! I'm back in the kitchen now that my exam is over and I am so happy to be here! Hopefully I'll post more regularly and have time to start tackling some cool dishes that I've been wanting to do for a while. I'll share everything with you as I go. :)

Want to eat the best salad of your life? Make this salad!!! Seriously the best thing ever. Plus, it plates up beautifully so your dinner party guests will be wowed by how "fancy" it is. While it is a bit of work because you have to make all of the components prior to assembling your salads, if you prepare the components the day before, then you just have to plate it up when your guests come over. Its an awesome dinner party dish.


All of the below recipes are from the cookbook No more Secrets - recipes from the Cow Bay Cafe by Adrienne Johnston.

 First, make the spiced pecans.

Ingredients:
  • 3 tbsp corn syrup
  • 1 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 large pinch chipotle powder
  • 1 1/4 cups pecan halves
Method:
  1. Preheat oven to 325F. Line a baking sheet with parchment paper. Place a 30 cm piece of foil on a flat, heat-proof work surface (I used my cutting board).
  2. In a medium bowl, combine corn syrup, sugar, salt and chipotle powder. Add the nuts and mix well. Spread nuts on the prepared baking sheet in a single layer and bake for 12-15 minutes, stirring every five minutes until golden brown.
  3. Spoon them onto the prepared foil and cool slightly. Quickly separate the nuts and cool thoroughly. Store in an air-tight container.


Next, make the blueberry dressing.

Ingredients:
  • 1 cup frozen blueberries
  • 1/4 cup granulated sugar
  • 1/4 cup tarragon vinegar
  • 1 cinnamon stick
  • 1/2 tsp ground ginger
  • zest and juice of one lemon
Method:
  1. In a medium pot over medium-high heat, place the blueberries, sugar, vinegar, cinnamon stick, ginger and lemon zest and juice. Bring to a boil and simmer for five minutes. Then remove from heat and cool. Refridgerate until ready to use.
Then, make the herbed goat cheese.

Ingredients:
  • 1 small log goat cheese
  • 3 tbsp tarragon vinegar
  • fresh basil and tarragon
Method:
  1. Finely chop basil and tarragon. Combine goat cheese, tarragon vinegar and chopped herbs. Set aside in fridge.


Finally, assemble your salads when ready to serve (don't preassemble them).

Method:
  1. Toss mixed greens (approx 9 cups) lightly with olive oil, some kosher salt and fresh ground black pepper.
  2. Place a puddle of the blueberry dressing on a plate. Mound some of the greens onto the blueberry dressing.
  3. Place a few pieces of the herbed goat cheese and some of the pecans on top.
  4. Serve immediately.

SRC: Mushroom & Goat Cheese Bread Pudding

Can you believe its time for another SRC post already? I am so excited about the blog I was assigned this month!!! I honestly had such a hard time deciding what to make and will be making more recipes in the future. I was assigned the blog Fat Girl Trapped in a Skinny Body which is written by Julia from California. Julia seems to be a girl after my own heart because she bakes so many delectable looking desserts (you have to check out her s'more aniversary cake - I can't wait to make it!!!), and she also LOVES goat cheese... so much that she even made goat cheese frozen yogurt! Who woulda thought - it actually looked delicious and I was super tempted to try it out... but I settled for making a savory bread pudding - mushroom and goat cheese bread pudding to be exact.


And it was delish!! What a great recipe - I would definitely make it again, but not before I try out some other recipes from Julia's blog. It was so hard not to join as a follower this month and give myself away! Thanks Julia for posting such amazing recipes and thanks to Amanda & co. at the SRC for hosting this awesome group each month.



On to the recipe!




Mushroom & Goat Cheese Bread Pudding

Minimally adapted from Fat Girl Trapped in a Skinny Body


Ingredients:


  • 1 1/2 cups stale bread slices, cut into cubes

  • 1 egg

  • 1/2 cup milk

  • 1 cup chopped mushrooms

  • 2 cloves garlic, minced

  • 1 tbsp minced fresh herbs (I used rosemary and chives)

  • 2 ounces goat cheese

  • salt and pepper

  • proscuitto and additional goat cheese for garnish

Method:




  1. Preheat oven to 350F.

  2. In a medium bowl whisk together egg, milk, garlic, fresh herbs, salt and pepper.

  3. Add bread cubes, mushrooms and goat cheese to egg mixture. Stir gently just to incorporate. Pour into two ramekins and let stand for 15 minutes.

  4. Meanwhile, pan fry a couple slices of proscuitto in a pre-heated skillet until crispy. Crumble and reserve for later.

  5. Bake 30-35 minutes until pudding puffs up and custard is set. Remove from oven and cool slightly before serving. Sprinkle with crumbled crispy proscuitto and additional goat cheese.

Salad with Pears, Candied Pecans and Goat Cheese



I made this salad for our Thanksgiving dinner and quite frankly hadn't thought of it much since then... until today that is. I have some cinnamon sugar pecans toasting in the oven and was reminded of the lovely candied pecans on this fantastic salad - definitely long overdue in posting this recipe.

The combination of the goat cheese, pears and pecans along with the delicious and easy vinaigrette and voila - you have this amazing and simple salad that is sure to please even the most discerning palate. Make it for your dinner party to please your guests or for a week night dinner - if you add some roasted chicken you've got yourself a meal. I found this recipe on fellow food-blogger's site - Food & Whine. Jen's blog is a great resource when you're looking for any kind of recipe - check it out when you have a minute!

Salad with Pears, Candied Pecans and Goat Cheese
Recipe from Food & Whine
Ingredients:
  • 1/3 cup pecans
  • 3 tbsp icing sugar
  • 1/8 tsp allspice
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tbsp orange juice concentrate, thawed
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic, minced
  • 1/2 tsp liquid honey
  • 1/2 tsp dijon mustard
  • 8 cups baby spinach leaves or mixed greens
  • 1 large ripe pear, thinly sliced or cut into matchsticks
  • 2 oz goat cheese

Method:

  1. Preheat the oven to 350F. Spray a baking sheet with non-stick cooking spray.
  2. Rinse pecans in cold water, drain but do not let them dry. Combine icing sugar, cinnamon, allspice and nutmeg in a small bowl. Toss pecans in the mixture and coat them well. Spread on the prepared baking tray.
  3. Bake 8-15 minutes in center of the oven. Keep a close eye on them - they burn quickly. Remove and cool. Set aside.
  4. Combine spinach, pear and goat cheese in a large bowl.
  5. Whisk the juice concentrate, oil, vinegar, garlic, honey and mustard together in a small bowl. Pour the dressing over the salad and toss to coat. Garnish with the pecans.

**Note: candied pecans can be made up to two weeks in advance: make ahead and store in an airtight container.


This is a great salad - even people who don't usually like salad will like this one! The flavours are delicious and it is on the sweeter side. No scary vegetables in this salad - its all down-to-earth, easy-to-find ingredients. Hope you enjoy this one!

Herbed Goat Cheese Bites



Need an easy appetizer to make this weekend that will impress your company? Try out this recipe! You'll love it - the flavour is amazing and you can whip it up in no time at all. The sundried tomatoes really top it off - they add a beautiful pop of colour and a lovely depth to the already delicious flavour combination.


Tyler Florence notes that "pressing baguette slices into the bottom of a muffin tin before you toast them creates a spoon shape when they come out of the oven and they're super crisp. The goat cheese gets rolled in chopped fresh herbs and sliced into circles, and if the cheese is cold from the fridge and your knife is wet, the sclices come out perfect." I didn't press mine into a muffin tin, but they still looked beautiful and you have an option for when you want your appy to look particularly impressive.

Herbed Goat Cheese Bites
Recipe from Tyler's Ultimate, p 32

Ingredients:
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh flat-leaf parsley
  • 1 tbsp fresh tarragon
  • 1 tbsp fresh mint
  • 1 8-oz log soft fresh goat cheese
  • 1 baguette
  • 2 tbp extra-virgin olive oil
  • 1/2 cup oil packed sun-dried tomatoes
  • 1/2 cup fresh basil leaves

Method:

  1. Combine thyme, parsley, tarragon, and mint leaves on a cutting board and chop them finely together. Unwrap the log of goat cheese and roll it in the chopped herbs, pressing the herbs to adhere.
  2. Preheat the oven to 350F.
  3. Cut the baguette into thin slices and drizzle them with a little extra-virgin olive oil. Gently press slices into a muffin tray so they form a boat-like shape and bake for 5 to 7 minutes. They should be lightly browned and crisp. Let baguette slices cool in muffin tin.
  4. Top each baguette slice with a slice of herbed goat cheese. Top with sun-dried tomato and garnish with fresh basil leaves.

Pane Bianco - 3 Ways



Alright, get ready for a show stopper - literally! This bread is spectacular to look at and even more spectacular in your mouth. A good friend of mine who is definitely a culinary genius just celebrated a milestone birthday (something like 20 I think ;) ) and her hubby planned her a birthday party. He said we could feel free to bring a dish that we made... well of course I had to bring something, but could I decide what to bring? Of course not! It had to be something that travelled well, didn't take too long to make and tasted and looked amazing. Then I came across this blog post at Living in the Kitchen with Puppies for Tomato, Basil and Garlic Filled Pane Bianco. The photos were beautiful. So, about 3 hours before we were supposed to go to this birthday party, I started making this bread! Pulled it out of the oven and headed out the door. Any way, long story short, pretty much all conversation ceased when my friend pulled the bread out of the bag I had it wrapped in and everyone needed a rendition of how I made it and what was inside! It was an absolute hit.


I was so thrilled with the bread that I decided to play around with fillings. The three types I tried were:
  • Sundried tomato, roasted garlic, goat cheese, cheddar cheese, fresh rosemary and basil
  • Roasted garlic, goat cheese, and fig and walnut wine preserves
  • Cream cheese and jalepeno cranberry jelly

I would also like to try a cinnamon and brown sugar filling similar to cinnamon bun filling as I think it would bake up beautifully and taste absolutely divine!

Any way, on to what you came here for: the recipe!

Tomato, Basil & Garlic Pane Bianco

Recipe adapted from Living in the Kitchen with Puppies

Ingredients:

  • 1/2 cup warm water
  • 1/4 cup sugar
  • 4 teaspoons instant yeast
  • 1 cup warm low-fat milk
  • 1/3 cup extra-virgin olive oil
  • 2 large eggs
  • 2 teaspoons salt
  • 6 cups bread flour
  • 1 (8 1/2-ounce) jar oil-packed sun-dried tomatoes
  • 1 large head (or two small) roasted garlic
  • 1 1/2 cups shredded Italian blend cheese, divided (or any cheese you have on hand - I used cheddar, goat cheese and parmesan)
  • 2/3 cup chopped fresh basil (or any fresh mixed herbs - basically whatever you have on hand)

Method:

  1. Combine the water, sugar, yeast, milk, olive oil, eggs, salt, and flour, and mix and knead by hand, stand mixer, or bread machine until you've made a cohesive, soft dough. If you're kneading in a stand mixer, it should take 5 to 7 minutes at second speed, and the dough should barely clean the sides of the bowl, perhaps sticking a bit at the bottom. In a bread machine (or by hand), it should form a smooth ball. Place the dough in a greased bowl, and turn to grease the top. Cover and let rise in a warm place until double, about 45 minutes.
  2. Meanwhile, thoroughly drain the sun-dried tomatoes; lay them on a paper towel to absorb any excess oil. Using kitchen shears, finely chop the tomatoes.
  3. Line two baking sheets with parchment. Gently deflate the dough and divide it in half. Roll one piece into a 22" x 8 1/2" rectangle. Rub with half the garlic, cheese, basil, and tomatoes.
  4. Starting with one long edge, roll the dough into a log the long way. Pinch the edges to seal.
  5. Place the log seam-side down on a baking sheet. Using a small sharp knife, start 1/2" from one end and cut the log lengthwise down the center about 1" deep, to within 1/2" of the other end.
  6. Keeping the cut side up, form an "S" shape. Tuck both ends under the center of the "S" to form a "figure 8"; pinch the ends together to seal. Cover and let rise in a warm place until double, 45 to 60 minutes. Repeat with the remaining dough.
  7. While the loaves are rising, preheat the oven to 350°F.
  8. Bake the loaves for 35 to 40 minutes. Tent the loaf with foil after 15 to 20 minutes to prevent over-browning.
  9. Remove loaves from their baking trays; cool on racks. Store any leftovers well-wrapped, at room temperature.

Experiment with fillings and toppings - though in my experiments dry toppings seem to work better than wet! And colourful fillings look very nice when your bread puffs up and opens so beautifully to show off its fillings.:) I really enjoyed this recipe and despite how technical the rolling and shaping sounds, it is really easy. Just be patient and remember, practice makes perfect.
